An easy savory spread made from mashed chickpeas, tahini, lemon juice, and spices.
Ingredients
- 2 cups cooked or canned chickpeas, drained (keep liquid if cooked)
- 1 tablespoons olive oil
- 2 tablespoons tahini
- 3 tablespoons fresh lemon juice
- 1 teaspoon cumin or paprika (or both)
- 1½ teaspoons salt, plus more to taste
- Black pepper to taste
- Parsley for garnish
Steps
- Combine the chickpeas, oil, tahini, lemon juice, paprika, and salt in a food processor or blender and puree until very smooth, adding some chickpea cooking liquid or water if necessary. Taste and adjust the seasoning. Garnish with parsley.
