Fish Curry

Eash fish (or chicken or tofu) curry. Combine with rice or a salad.

  1. Heat pot to medium high, add oil. Add onions along with salt and some pepper. Cook stirring occasionally until onions are very soft and almost falling apart. About 15 minutes. During this time add carrots and peppers so all are soft at same time.
  2. Add coconut milk and cook until it thickens, about 2 minutes. Add fish and stir, then cook until done, 3-6 minutes.
  3. Add tomatoes and cook another minute. Adjust seasoning. Serve over rice, garnished with mint or basil.
